Making Chilli Fritters aka Mirchi Pakoras at Home
In this section we will go through detailed steps with pictures of different milestones so you can validate your progress as you follow our Chilli Fritters recipe. To make a good Chilli fritter, all you need to know is – how to make the best batter for Fritters. Also, remember the definition of good varies based on your personal preferences as well so controlling the amount of ingredients is important.
Though their are ready made fritter batters available in market we usually don’t recommend them unless you are a total rookie. The reason behind this is that to prepare the batter from a ready mix and to make your own batter is almost the same. But with your own batter you can choose to perfect it as per your taste and hence have more control over the end product. The time required to make Fritters from ready mix and your custom ingredients is also the same – usually 5 – 10 mins.(It is of-course no rocket science.)
Pre-preparation For Chilli Fritters Or Mirchi Pakora
To prepare Chilli fritters, lets prepare the Green chillies that we have to taken to make the dish. First, Cut open the Green chillies along their length such that they are open from one side only. This is done so as to remove the seeds from it.
Now, we need to prepare the stuffing for green chillies. To make the stuffing, Mix pinch of Salt, pinch of Red Chilli Powder and Dried Mango powder together. You can make this stuffing extra hot by adding Green Chilli seeds that we removed earlier.
Now, open the green chillies and put this stuffing into them. Also, wrap them in the left-over stuffings.
Take approx 1-2 cup Vegetable oil in a deep frying pan and put it on gas and switch it to high flame. This you can do, so that oil is heated till the time you prepare the batter.
How To Make Chilli Fritters Batter?
To make the batter, first finely Chop 5 g green chillies and Coriander leaves. These will be mixed to give batter some extra spice and flavour.
Now to prepare the batter, take Gram Flour, Rice flour, Asafoetida, Red chillies powder, finely chopped green chillies, coriander leaves, Turmeric, Salt and Carom Seed in a bowl and add 1/2 cup water to it.
Mix all Ingredients properly so that there are no lump formations as it will spoil the experience. Your batter is now ready. Experiment with ingredients to get the best flavour perfected to your taste.
Deep Frying Chilli Fritters
Once you are done with the pre-prepation step and batter is ready, it is time to make the Chilli Fritters. By now the oil in frying pan should be hot enough to make Chilli Fritters. To check this, take 1/2 tsp batter and drop it in the frying pan. If it makes intense fizzing sound and the batter drop immediately floats in oil then it means oil is ready for frying.

Take stuffed Green Chillies and mix it well with batter such that batter wraps each chilli piece properly. Now drop it in hot oil. Be cautious of the hot oil spatter as they may cause burn. This may happen if you accidentally drop water droplets in the hot oil, so be careful.
While you fry, roll over Chilli Fritters so they get fried evenly on both sides. Fry Chilli Fritters until they turn golden brown. Once they get the required colour you can take them out using slotted turner or slotted spoon.
Your Chilli Fritters are now ready to be served. Before serving, sprinkle some Chat Masala and some herbs such as Parsley and Oregano on top of Chilli Fritters.

- In case you do not have Rice flour, you can skip it and the Chilli Fritters will still be delicious. Rice flour just makes the Chilli Fritters extra crispy.
- Do not fry Fritters or Pakoras on low flame as in such case they will soak more oil and not cook properly.
- Since Chilli Fritters are quite hot you can complement Chilli Fritters with Rice Kheer and serve with Aamras.

- 50 g Green Chillies

- 1 tbsp Rice flour Chawal Aata
- 5 g Green Chillies
- 1/4 tsp Carom Seeds Ajwain
- 1/4 tsp Salt As per taste
- 1/8 tsp Red chillies powder Lal Mirch
- 1/4 tsp Turmeric Haldi
- Pinch of Asafoetida Hing
- Few Coriander Leaves Hara Dhaniya
Main Ingredients for Chilli Fritters Stuffing
- Pinch of Salt
- Pinch of Red Chillies Powder
- 1 tsp Dried Mango Powder Amchur
Optional Ingredients for Chilli Fritters
- 1/4 tsp Garam Masala
Garnishing
- 1/4 tsp Chat Masala for added flavour and garnishing
- 1/8 tsp Dried Parsley for added flavour and garnishing
- 1/8 tsp Dried Oregano for added flavour and garnishing
