Mulled Wine aka Spiced Wine is a popular drink during Christmas and New Year. If it is Christmas time and you didn’t had a glass of Mulled Wine then we would say you definitely missed out on something this year.
Since it is served warm, it is a good companion for cold winter nights. Mulled Wine recipe is quite versatile and people make Mulled Wine in many different ways using many different spices.
Some people often add some other spirits such as Rum or Vodka in addition to other ingredients.
Especially during Christmas and New Year holidays many large businesses and local shops offer mulled wines prepared via their very own secret mulled wine recipe.
Due to its versatile nature, choice of spices usually depends on your personal preference but as a base – Red Wine, Sugar, Citrus fruits and a couple of other spices such as cloves, Anise etc are used to make mulled wine.

How To Make Mulled Wine
As already mentioned, mulled wine is basically spiced red wine and the exact choice of spices would depend more on your personal preference.
Mulled Wine should in essence have some spicy citrus flavour to it which gives the drink its character.
To make Mulled wine we used Lemon, Lime and Clementine however if you do not want to use Lemon or Lime you can instead use more Clementine as replacement.
Again, it is up to you as how you prefer your version of Mulled Wine to be.
As first step, to make Mulled Wine a thick bottom deep pan is required. This is so that it can retain heat for much longer time.
However, if you don’t have a thick base deep pan you can still use a pan to cook Mulled Wine but in such case you have to be careful about the heat and regulate it properly else you may end up boiling or burning while making mulled wine.
Now once you are ready with the utensil, use a kitchen knife or peeler to peel zest of lemon, lime and Clementine.
These zest will go into the preparation of Mulled Wine and will add the essential oil and flavour to your Mulled Wine.
Now pour Caster Sugar into the pan and add Bay leaves, Star Anise, Cardamom Pods, Cloves, Cinnamon Stick, Grated Nutmeg, Black Pepper powder and Zest of Clementine, Lemon and Lime to it.
Break the Cinnamon stick into half while adding.
You can also twist the zest before adding to release essential citrus fruit oils which will flavour your Mulled Wine.
Squeeze the citrus fruits on top of the Ingredients and put the pan on medium flame.
Now, pour ~ 1/4 bottle of Red Wine into the pan and stir the mixture for ~3 – 5 mins or until the Sugar is dissolved and a slightly thick syrup is formed.
Some people often tend to add all of the wine at this stage however in such case you may loose lot of Alcohol while making Mulled Wine which might not be a good thing unless you want it that way.
Once the syrup is ready, now pour remaining Red Wine into the mixture and cook for another 5 mins.
Please ensure not to boil the mixture else you will loose Alcohol in it.
During this whole process keep stirring the mix every now and then.
Your Mulled wine is now ready so time to switch off the flame.
How to Serve Mulled Wine
Let the Mulled Wine stay in the pot for a while and let the spices infuse with the Red Wine.
As your guests arrive and you would like to offer them Mulled Wine gently warm it up before serving.
If you prefer then garish it with a thin slice of Clementine while serving.
Use a ladle to pour Mulled Wine into the glasses however if you don’t like small bits of spices you can use a sieve while serving to get rid of them.
You can also use piece of Muslin cloth to tie up all the ingredients and dip this into red wine while preparing Mulled Wine.
We tend not to use the sieve or Muslin cloth as little bits of spices tastes better and they tend to infuse and cook better this way.
Recommendation
- There is usually no specific list of spices to be used for Mulled Wine however you can choose to add more spices such as Fennel Seeds, Ginger or Allspice in addition or replacement of any spices mentioned in the recipe.
- Do not add too much citrus fruit zest as it can make the Mulled Wine a little too bitter.
- Gently warm Mulled Wine before serving
- Do not boil Mulled Wine too much else you will loose its Alcohol content.
- Do not add all of the Red Wine in one go as in such case you may loose lot of Alcohol while preparing Mulled Wine.
- You can also add a little amount of honey along with caster sugar while making the syrup as mentioned in the recipe.
- Use a Muslin Cloth to tie up spices while making Mulled wine to get rid of small bits while serving Mulled Wine.

- 1 Clementine
- 1/2 Lemon
- 1/2 Lime
- 100 g Caster Sugar
- 4 Bay Leaves
- 2 Star Anise
- 1 Nutmeg
- 6 Cloves
- 1 Cinnamon Stick
- 1/4 tsp Black Pepper Powder
- 4 Cardamom Pods

How To Make Mulled Wine

- Now, squeeze the citrus fruits on top of the Ingredients. Now put the pan on medium flame.
